I have cravings for this strawberry goat cheese salad. Maybe it’s the creaminess of the goat cheese that gets me. Or the sweet bite of the dates. Maybe it’s the fresh sliced strawberries that brighten up the salad. Or maybe it’s the perfect combination of it all with the tangy balsamic vinaigrette that really make this salad stand out as a favorite.

Whatever it is, even my husband who doesn’t care for almonds, devoured this salad and said it was delicious. I love making a believer out of him ;p

Yes!  Feel free to change up the spinach for spring greens. Change up the strawberries for blueberries, blackberries or make a berry medley! The almonds can be replaced with walnuts, pecans, or even candied walnuts or pecans if you want a sweet crunch.

How do I make this goat cheese salad?

To make this scrumptious salad, wash and slice the strawberries and dates. In a large salad bowl, fill the bowl with spinach. Crumble the goat cheese on top. Add the sliced strawberries, dates, and slivered almonds. Add the dressing right before serving.

Strawberry Goat Cheese Salad With Slivered Almonds and Dates

Ingredients

  • 3 handfuls fresh spinach about 5 ounces
  • ½ cup fresh strawberries sliced
  • 2-3 dates pitted and sliced
  • 2 tablespoons slivered almonds
  • ¼ cup goat cheese
  • balsamic vinaigrette

Instructions

  • Rinse and slice strawberries.
  • Take out the seeds from the dates (if it is not pitted) and slice them into thin strips. If the strips are long, cut them in half.
  • Put the spinach in a large salad bowl.
  • Add the sliced strawberries, sliced dates, almonds, crumbled goat cheese, and slivered almonds on top.
  • Add the dressing right before serving.
  • Enjoy!

Notes

What kind of dates should I use?
I use Medjool dates in the recipe but feel free to use delget noor dates as well. Delget noor dates are usually pitted, but they are also smaller than Medjool dates so you may need more delget noor dates for the recipe and depending on your taste preference.
