To make this stew, you will need:
As with any great beef stew recipe, there are essential steps that must be done before you dump all the ingredients into the crockpot, set it, and forget it. These steps deepen the flavors of the stew and ensure the results are delicious.
So let’s get started!
First, wash, peel and chop the vegetables.
Dice the onion, mince the garlic, and cut the carrots and potatoes into 2-inch pieces.
Next, rinse and pat dry the chuck roast. Cut the meat into 1.5-inch chunks.
Sprinkle with salt and pepper.
These next steps are essential to developing a deep flavor in the stew.
Heat up a large skillet on the stovetop on medium-high heat and add a tablespoon of olive oil.
Add the beef chunks in batches and sear the meat until it is browned on all sides. This step is essential to making a delicious beef stew so don’t skip it!
Brown the meat in 2-3 batches to ensure the pot is not overcrowded. This way, the meat is seared versus steamed.
Sear each batch and transfer the batches to the crockpot.
Next, add another tablespoon of olive oil to the same skillet that you use to brown the meat.
Add the onion and saute for a couple of minutes. Then add the minced garlic and saute for a minute with the onion.
Transfer this mixture to the crockpot.
Still using the same skillet, now add the beef stock to pick up any leftover flavors of the browned meat and onion mixture. Bring it to a simmer as you sprinkle in the flour.
*Tip: Use a mesh strainer and a whisk for this step to ensure you don’t get clumps of flour.
Let the flour simmer for a couple minutes.
Pour the broth mixture into the crockpot.
At this point, we are done using the skillet and will complete the final steps in the crockpot!
Add the herbs, bouillon, bay leaves, Worcestershire sauce, and tomato paste to the crockpot and stir well to combine.
Add the carrots and potatoes and put the lid on.
Now set it and forget it!
Set it on low for 8 hours or on high for 6 hours. Stir once in the middle of that cooking time frame (if you can).
Add salt and pepper to taste, if needed.
Voila! You have a delicious beef stew!
Garnish with chopped parsley.
