To make this soup, you will need:
In my quest to simplify meals without compromising on flavor, I suggest cooking the onion, garlic, and beef all in one step. This saves on time by about 15 minutes.
Typically, I would brown the meat first, transfer it to another plate, saute the onion until translucent, cook the garlic for a minute, then return the beef to the pot. This process takes longer but makes a minimal difference in the flavor profile of this soup. Therefore, we will use the “all in one pot” method.
To start, dice the onion and mince the garlic. Put it in a large soup pot along with the ground beef, herbs and spices.
Cook on high until the meat has browned and the onion is translucent.
Next, add the chicken stock, crushed tomatoes, and tomato paste to the beef mixture and stir until the tomato paste is incorporated.
Bring to a boil then reduce the heat to low/medium-low and let it simmer for 15 minutes.
Add the parmesan cheese and stir.
Then add the tortellini, kale, and heavy cream. Stir until combined. Then let it simmer for another 7 minutes until the pasta is cooked and tender.
Voila!
With minimal effort, you have an absolutely decadent soup you can enjoy on its own or with a crusty roll.
