This turkey sausage soup recipe came about when I was brainstorming a super healthy and guilt-free dinner for my family.
Honestly, ever since I had kids, I have tried my very best to be conscious about what I put into their growing bodies. That thought has also impacted my life positively because it makes me conscious of what I’m putting into my body too.
I’m a realist too, though, so I try and follow a rule I created for myself and that is to “choose better.”
To me, that means if there is a way I can make a meal healthier, then I will do just that. For example, I will add a veggie or two to any dish or I will substitute turkey for ground beef.
They are simple switches but they make a healthier impact.
This post is about how to make a simple but yummy turkey sausage soup.
To make this soup, you will need:
Yes! To save on time, you can most definitely use frozen veggies! Frozen vegetables are not only a time-saver, but they are sometimes packed with more nutrients than their fresh counterparts!
That’s because they are picked at the peak of freshness and frozen right away (when they hold most of their nutrition). This saves all those nutrients until you use it in a dish.
I am always reaching for a bag of frozen veggies to make a quick meal. There’s no shame in the frozen veggies game in my household 😉
First, prep your ingredients.
Dice the onion and mince the garlic.
Wash, peel and prep the veggies. Dice the zucchini, grate the carrots and chop the kale.
In a large soup pot, saute and brown the ground turkey. Once it is browned, remove it from the pot and set it aside.
Now, add the olive oil and onion into the pot that was used to brown the turkey. Saute the onion until translucent (about 7 minutes).
Next, add the garlic and stir for just a minute.
Add the tomato paste, herbs, parmesan cheese, and chicken stock to the pot and stir until the tomato paste is combined.
Then add the remaining ingredients including the browned turkey, kale, zucchini, carrots, and orzo into the pot, stir and bring it to a boil.
Then reduce the heat to a simmer for 20 minutes.
Add salt and pepper to taste, if needed. Add chopped parsley if desired and it’s ready to serve!
Serve it on its own or with a roll.
Add a dollop of sour cream for a touch of creaminess if you’d like.
