I love making this for my family and myself. It’s easy to make and healthy making it a win-win in my book!

It has texture without being overly crunchy…I don’t know about you but I don’t want to get cuts in my mouth trying to bite down on hard granola!

It has just the right amount of sweetness and cinnamon to complement anything you are adding it to. Or, it’s perfect just on its own or with a bowl of milk…mmm.

What do I need to make this maple syrup granola?

To make this healthy granola recipe, you will need:

How do I make the best granola recipe?

First, combine all the dry ingredients in a big bowl. This includes the rolled oats, nuts, coconut shreds, cinnamon and salt.

Next, add the “wet” ingredients. Add the coconut oil and maple syrup and stir it into the oat mix with a spatula.

Then stir in the almond butter until combined.

Line a flat baking pan with parchment paper and transfer the granola mixture onto the pan. 

Pressing firmly, mold it into a log or oval shape that is about 1 inch thick.

Bake the granola mixture in the oven at 300°F for about 20 minutes.

At the 20 minute mark, you should see some browning at the edges. Take out the granola and rotate the granola by gently breaking it apart and tossing it.

*Do so gently so clusters of granola remain intact.

After it has been gently tossed and spread out a bit, put the granola back into the oven for another 20 minutes or until the granola is golden brown and toasted.

Once it is golden brown, remove it from the oven and let it cool.

Once it is cooled, transfer it to an airtight jar and refrigerate it for up to 3 months. This recipe makes just enough to fill a 32-ounce jar.

Serve this granola by itself as a snack, with milk like a cereal, in a parfait with yogurt, in an acai bowl, on oatmeal, or on chia pudding…the delicious possibilities are endless 🙂

Ingredients

  • 2 cups rolled oats
  • ¼ cup slivered almonds or any other nut or seed variety
  • ¼ cup chopped walnuts or any other nut or seed variety
  • ½ cup coconut shreds unsweetened
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • cup maple syrup
  • 2 tablespoons coconut oil melted
  • 2 tablespoons almond butter or other nut butter

Instructions

  • Set the oven to 300°F.
  • In a big bowl, combine the dry ingredients including the rolled oats, almonds, walnuts, coconut shreds, cinnamon, and salt. Stir to combine.
  • Next, add the coconut oil and maple syrup to the oats mixture. Using a spatula, mix well.
  • Next, add the almond butter and combine.
  • Line a baking sheet with parchment paper and dump the granola mixture onto it.
    Pressing firmly, form a 1-inch thick log or oval.
  • Bake it in the oven for 20 minutes. You should see the edges starting to brown.
    Take the granola out of the oven and gently toss it. *Do so gently so that clusters of granola remain. Gently spread it out on the baking pan.
  • Put the granola back into the oven for another 20 minutes or until the granola is golden brown and toasted.
  • Take it out of the oven and let it cool. Once cooled, put it in an airtight jar. It should fill a 32-ounce jar and keep well in the fridge for 3 months.
  • Serve this granola by itself as a snack, with milk like a cereal, in a parfait with yogurt, in an acai bowl, on oatmeal, or on chia pudding.

How long is this granola good for?
It is good for 3 months in the fridge.
Can I use seeds instead of nuts?
Yes, simply replace the nuts with seeds or do a combination! I've made this recipe with 1/4 cup almonds and 1/4 cup pumpkin seeds and it tastes just as amazing!
How much granola does this make?
This makes just enough to fill a 32-ounce jar.
