In a small bowl, make the seasoning mix by combining the rosemary, thyme, onion powder, salt, and black pepper.

Now, let’s prep the chicken.

  1. Start by rinsing and patting dry the chicken breast.
  2. Cover each breast with plastic wrap and use a meat tenderizer to pound each breast to about ¾ inch to 1 inch (max) in thickness. 
  3. Drizzle and rub with oil.
  4. Season with the seasoning mix.

Next, add oil to a skillet set on medium to medium-high heat. Note: If you are using a cast iron skillet, make sure it is only set to medium heat.

Before placing the chicken in the pan, ensure the oil is hot. This will allow a nice sear on the chicken. Place the smooth side down of the chicken first. You always want to sear the smooth or “presentation” side first. Sear for about 7 minutes. While it is searing, don’t touch or move it…just let it be.

Once the chicken has achieved a golden brown crust, flip the chicken over and sear the other side for 5-7 minutes until it’s golden brown.

Tip: Sear in batches if the pan is too small.

  2. Add the butter to the skillet to melt.
  3. Add the minced garlic and cook for about 30 seconds.
  4. Set the heat to medium-high heat and add the apple cider vinegar and chicken broth to deglaze the pan. The broth will bubble and steam so be careful!
  5. Stir and let it sizzle and evaporate.
  6. Stir the chicken around and let the liquid simmer until it reduces to half (about 2 minutes).

Once the chicken is cooked through and has reached an internal temperature of 165°F, remove it from the heat.
