This middle eastern cucumber salad is easy to make and the blend of ripe veggies and herbs adds a fresh element to any dish.
I make this middle eastern cucumber salad at least once a week. The ripe Mediterranean cucumbers and tomatoes mixed with fresh herbs and a squeeze of lemon dressing allow this salad to brighten any meal.

This post is about how to make an easy and delicious middle eastern cucumber salad.
You will need:
Start by slicing the cucumbers in half, lengthwise. Then, slice them in half again, then chop.
Next, dice the tomatoes. Finely dice the onion and finely chop the cilantro and mint.
Put all the ingredients in a large bowl. Squeeze fresh lemon juice on top, drizzle on the olive oil, and sprinkle with salt. Gently toss the salad.
You can chop the ingredients a day in advance and keep them in a covered bowl in the refrigerator. But, do not add the lemon, olive oil or salt until you are ready to serve it. Salt and lemon will extract the water from the cucumbers and tomatoes and result in a soggy salad so it’s better to save this as your last step just before serving.
