First, sift through the lentils and take out any pebbles that may be present.
Next, rinse the lentils from any dirt or debris. This may take multiple rinses.
Once the water runs almost clear, drain it and set it aside.
In a medium to large pot, heat the oil and saute the onion on medium/medium-high heat until translucent. This takes about 7-10 minutes.
Next, add the curry spices to the onion and cook for just a minute to bring out the curry powder’s aroma.
Add the lentils, bouillon, and water to the pot. Set it on high until it comes to a boil, then reduce the heat to low or medium-low to simmer for about 45 minutes.
As the lentils simmer, they will absorb most of the liquid and turn porridge-like.
Once the liquid is absorbed and the lentils are no longer hard at the center, the dish is done.
This red lentil curry can be eaten on its own like a soup or with naan. To add creaminess, add a dollop of yogurt or sour cream.

I recently learned about the nutritional value of lentils and have been on a hunt for easy lentil recipes I can incorporate into my diet. This recipe definitely fit the bill. It was very easy to make and was delicious. I didn’t realize a lentil porridge could stand alone as a meal but it surprisingly does.
