Talk about an unforgettable tortellini soup with spinach…all I have to say is mmm, mmm, mmmmm. Actually, that’s not all I have to say but it is what I think whenever I think of this soup!

This is definitely one of my most favorite vegetarian soups. It has everything it needs to make a delicious, comforting meal. The creamy tomato-based sauce, the tender tortellini, the fresh spinach, the slight kick from the red peppers flakes, the savory touch of the parmesan cheese…thank goodness for leftovers!

What do I need to make this soup?

To make this soup, you will need:

How do I make this creamy tortellini soup?

First, peel and dice the onion and mince the garlic.

Set a large soup pot over medium-high heat and saute the onion for about 7 minutes until it is translucent. Add the garlic and saute for just a minute to bring out its aroma. 

Add the chicken or vegetable stock to the pot. 

Then add the crushed tomatoes, tomato paste, herbs and spices and stir until the tomato paste is incorporated.

Bring it to a simmer for 1 minute. Add the parmesan cheese and stir.

Then, add the chopped spinach, tortellini and heavy cream. Stir until combined.

Let it simmer for another 7 minutes or so until the tortellini is cooked and tender.

And that’s all there is to it! Dinner is served 🙂

Ingredients

  • 12 ounces tortellini pasta fresh or frozen
  • 3 cups spinach chopped
  • 1 onion finely chopped
  • 5 cloves garlic minced
  • 4 cups chicken or vegetable stock
  • 1 cup heavy cream
  • ½ cup parmesan cheese grated
  • 1 can crushed tomatoes 14 ounces
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • ¼ teaspoon red pepper flakes

Instructions

    Yes, yes, and yassss! Those are my taste buds talking lol! This soup is perfection: creamy, loads of flavor, but subdued all at the same time. Knowing myself, I will be making this soup at least once a week, it’s that good!
