My husband and I rarely take time for ourselves…anyone with kids I’m sure can concur. But the few moments we get a chance to take a day or two away, allow us to slow down time and enjoy the little things like a quiet breakfast.

One thing I enjoy doing during our short getaways is explore the town and find a cute cafe for a light breakfast. This bagel is inspired by a bagel I had at one of these quaint cafes. To my surprise, I really enjoyed the fresh take on the usual scrambled egg approach. I took this bagel up a notch by adding some crisp veggies, a boiled egg, and lemon pepper to make it stand out.

Firstly, boil the eggs: Fill a small saucepan with water and add the eggs to it. Bring the water to a boil then turn off the heat but keep the eggs in the hot water for 10 minutes. Then, rinse with cold water.

  1. Pick your favorite bagel and lightly toast it.
  2. Spread cream cheese on both sides.
  3. Layer on the thinly sliced cucumbers.
  4. Layer on the tomatoes.
  5. Slice the hard-boiled eggs, layer them on, and sprinkle on salt.
  6. Sprinkle a generous amount of lemon pepper on the eggs.
  7. Layer on the thin red onion slices.
  8. Add the avocado slices to the other bagel half. Sprinkle the avocado with salt and generously sprinkle with lemon pepper.

Ensure every layer has salt to taste. Put the bagel together and serve.

Ingredients

  • 2 everything bagels
  • 2 eggs hard boiled, sliced
  • 1 Mediterranean cucumber sliced
  • 1 tomato sliced
  • ¼ red onion sliced
  • 1 avocado sliced
  • 2-4 tablespoons cream cheese
  • lemon pepper seasoning
  • salt to taste

Instructions
