In a small saucepan on medium-high heat, stir together 3/4 cup balsamic vinegar with 1 tablespoon honey. Bring to a boil, then simmer for about 20 minutes until it has reduced to half the amount and takes on the consistency of syrup.
First, set the oven to 400°F. Then wash, peel and cut the carrots into 1-inch chunks.
Put them in a bowl and drizzle with olive oil until they are nicely coated. Sprinkle with some salt (optional).
Spread them out on a baking pan and roast in the oven for 20-30 minutes. Toss the carrots halfway through so the bottoms don’t burn before the carrots fully cook.
Take the carrots out of the oven and put them in a bowl. Drizzle about a tablespoon of honey balsamic glaze and toss.
Serve these delicious carrots alongside any other dish to make a meal.
