Ingredients
2poundscarrots
2tablespoonsolive oil
saltoptional

¾cupbalsamic vinegar
Instructions
First, set the oven to 400°F.Then wash, peel and cut the carrots into 1-inch chunks.
Put the carrots in a bowl and drizzle with olive oil until they are nicely coated. Sprinkle with some salt (optional).
Set them out on a baking pan and roast in the oven for 20-30 minutes. Toss the carrots halfway through so the bottoms don't burn before the carrot fully cooks.
While the carrots are roasting, prepare the honey balsamic glaze. (For the full instructions, please go to the HONEY BALSAMIC GLAZE post here.)In a small saucepan on medium-high heat, stir together 3/4 cup balsamic vinegar with 1 tablespoon honey. Bring to a boil, then simmer for about 20 minutes until it has reduced to half the amount and takes on the consistency of syrup.
Take the carrots out of the oven and put them in a bowl. Drizzle about a tablespoon of honey balsamic glaze and toss.
