To make this recipe, you will need:
The majority of the effort in making this dish comes in the preparation phase.
First, set the oven to 400 degrees F.
Combine the spices, lemon juice, and water in a bowl.
Next, wash and skin the chicken leg quarters.
Peel and slice the onion.
Place the onion in a large baking dish (about 11×13 inches). Set the chicken on top of the onion and pour the lemon mixture over the entire dish.
Place the baking pan in the oven and bake for 30 minutes.
Then, carefully pull the baking pan out and flip the chicken over or baste the chicken by scooping some of the juice from the baking dish and pouring it over the chicken.
Put it back into the oven and bake the rest of the way.

I was back at your website for more recipes and decided to make the lemon chicken. It was just for one person so I just used two chicken thighs and cut the remaining recipe ingredients. There was so much flavor with so few ingredients, I was very pleased. I especially liked that it was a one pan meal. I did add fresh green beans to the pan so they would cook with the onions and the chicken so that I would have a green vegetable with it without having to clean another pot.
