Ingredients
6chicken leg quarterswashed and skinned
1smallonionsliced
2teaspoonsturmeric
½cupfresh lemon juice
2teaspoons salt
½teaspoonblack pepper
1tablespoonolive oil
1cupwater
Instructions
Set the oven to 400°F.
In a medium bowl, combine the salt, pepper, turmeric, lemon juice and water.
Peel and slice the onion. Scatter the onion slices in a large baking dish.
Wash and skin the chicken leg quarters. Place them on top of the onion. Then, pour the lemon mixture over the entire dish.
Place the baking dish in the oven. After 30 minutes, carefully flip the chicken over or baste the chicken with the juice. Set it back in the oven and bake for another 20-30 minutes or until the internal temperature of the chicken has reached 165°F.
If you want a bit of a crust on your chicken, you can broil it at the end of the cooking time for just a few minutes. Be sure to watch it carefully so it doesn't scorch it!
