My husband and I rarely take time for ourselves…anyone with kids I’m sure can concur. But the few moments we get a chance to take a day or two away, allow us to slow down time and enjoy the little things like a quiet breakfast.
One thing I enjoy doing during our short getaways is explore the town and find a cute cafe for a light breakfast. This bagel is inspired by a bagel I had at one of these quaint cafes. To my surprise, I really enjoyed the fresh take on the usual scrambled egg approach. I took this bagel up a notch by adding some crisp veggies, a boiled egg, and lemon pepper to make it stand out.

Firstly, boil the eggs: Fill a small saucepan with water and add the eggs to it. Bring the water to a boil then turn off the heat but keep the eggs in the hot water for 10 minutes. Then, rinse with cold water.
