There is something about teriyaki that makes it addicting. I think it’s a combination of its sweet and savory notes compiled with its versatility in uses with meat, chicken, fish, vegetables, noodles, and rice. There are few sauces that have the kind of range that teriyaki does.

One of my favorite ways to serve it though is with chicken. We start by mixing together our quintessential teriyaki sauce, browning the chicken, then combining the two to make an irresistible meal.

To make this recipe, you will need:

  1. In a bowl, combine the teriyaki sauce ingredients with a whisk except for the cornstarch + water. Separately, make the cornstarch slurry by combining the two and then adding it to the teriyaki mixture. Stir again and set aside.
  2. Cut the chicken into small chunks, about 1-inch pieces.
  3. Add oil to a pan on medium to medium-high heat and brown the chicken.
  4. Add the teriyaki sauce mixture to the chicken and stir. Lower the heat to medium heat and allow the sauce to thicken and the chicken to finish cooking, about 2-3 minutes.

Sprinkle the chicken teriyaki with sesame seeds and chopped scallions if you would like.

If you would like to add a vegetable to the dish, simply steam some fresh or frozen broccoli and mix it in with the chicken. 

To steam broccoli, put the broccoli in a steamer basket or directly in a pot with water with the lid on and steam for just a few minutes until the broccoli is tender.

To make it a meal, serve the chicken teriyaki with noodles, rice, or steamed vegetables.

Ingredients

Chicken

  • 2 pounds chicken thighs boneless, skinless
  • 2 tablespoons oil to saute
  • salt and pepper to taste
  • ½ teaspoon sesame seeds optional
  • ¼ cup scallions, thinly sliced optional
  • 3 cups broccoli, fresh or frozen optional

Teriyaki Sauce

  • ½ cup soy sauce
  • ¼ cup water
  • 2 tablespoons rice vinegar
  • ½ cup light brown sugar packed
  • 2 teaspoons garlic minced
  • 2 teaspoons fresh ginger minced
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch +2 tablespoons water

Instructions

  • Put all of the ingredients in a small mixing bowl and whisk together, except for the cornstarch and 2 tablespoons of water.
    Mix the cornstarch and water separately and add it to the mixture. Set aside.
  • Cut the chicken thighs into small chunks, about 1 inch.
  • Set a flat pan on medium to medium-high heat and add 2 tablespoons of oil.
    Brown the chicken.
  • Once the chicken has browned on all sides, add the teriyaki sauce mixture to the chicken (stir it once more before adding it to the chicken so it picks up any cornstarch that may have settled to the bottom of the bowl).
    Stir the teriyaki sauce and chicken together and allow the sauce to thicken (about 2-3 minutes).
    Sprinkle the chicken with sesame seeds and scallions if you prefer and enjoy!
  • Optional: If you want to add broccoli to the chicken teriyaki, simply steam it in a steamer basket or in a pot of shallow water until tender. Then, drain the broccoli and mix it with the chicken.
