Ingredients
Chicken
2poundschicken thighsboneless, skinless
2tablespoonsoilto saute
salt and pepperto taste
½teaspoonsesame seedsoptional
¼cupscallions, thinly slicedoptional
3cupsbroccoli, fresh or frozenoptional
Teriyaki Sauce
½cupsoy sauce
¼cupwater
2tablespoonsrice vinegar
½cuplight brown sugarpacked
2teaspoonsgarlicminced
2teaspoonsfresh gingerminced
1tablespoonsesame oil
2teaspoonscornstarch+2 tablespoons water
Instructions
Put all of the ingredients in a small mixing bowl and whisk together, except for the cornstarch and 2 tablespoons of water.Mix the cornstarch and water separately and add it to the mixture. Set aside.
Cut the chicken thighs into small chunks, about 1 inch.
Set a flat pan on medium to medium-high heat and add 2 tablespoons of oil. Brown the chicken.
Once the chicken has browned on all sides, add the teriyaki sauce mixture to the chicken (stir it once more before adding it to the chicken so it picks up any cornstarch that may have settled to the bottom of the bowl). Stir the teriyaki sauce and chicken together and allow the sauce to thicken (about 2-3 minutes).Sprinkle the chicken with sesame seeds and scallions if you prefer and enjoy!
Optional: If you want to add broccoli to the chicken teriyaki, simply steam it in a steamer basket or in a pot of shallow water until tender. Then, drain the broccoli and mix it with the chicken.
