  2. Strain the fresh lemon juice. Add the lemon juice and garlic to the tahini.
  3. Add the water and salt. Mix together with a whisk until well combined (about 2 minutes).
  4. Keep whisking until the sauce lightens in color and the consistency is smooth.

This sauce is smooth, except for the little bits of garlic throughout. I, personally, don’t mind the minced garlic bits in the sauce.

But, if you prefer an ultra-smooth sauce with no garlic bits, you can use an immersion blender to blend the sauce. Note: This, in turn, may make the sauce thicker so you will have to adjust the consistency (and taste) by adding more water, salt, and lemon juice.

Transfer the sauce to an airtight jar or container and keep it in the refrigerator for up to two weeks.
