A delicious thick balsamic dressing boils down to two things: a perfect balance of flavors and an easy trick to make it thick and creamy.

This thick balsamic dressing is currently my favorite dressing. The flavor is tangy yet balanced and its thick consistency adds body to the dressing.

I love to pour it on a simple house salad with greens and tomatoes, or a strawberry goat cheese salad where the tanginess of the dressing complements the sweetness.

This dressing is extremely easy to make and you’ll never need to buy store-bought again once you realize just how simple and delicious it is!

To make this recipe, you need:

The steps here are simple and straightforward. 

  1. Combine all of the ingredients (except for the olive oil) in a small mixing bowl with a whisk.
  2. Slowly pour the olive oil while continuously whisking it in to emulsify the vinaigrette.
  3. Ensure all ingredients are combined.
  4. To thicken the dressing, use an immersion or hand blender and blend the dressing for 2-3 minutes until it thickens. If you do not have a hand blender, transfer the dressing to a blender and blend until it thickens.

How do I store creamy balsamic dressing?

Put the dressing in an airtight jar and store it in the refrigerator. It will be good for up to 3 weeks. Be sure to stir it before using.

If the dressing sets in the refrigerator, let it thaw out on the counter for a few minutes before using. If you can’t wait, zap it in the microwave for just 5 seconds, stir, then serve!

Ingredients

  • ¼ cup balsamic vinegar
  • 1 tablespoon honey
  • 2 teaspoons dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • teaspoon ground black pepper
  • ½ cup extra virgin olive oil

Instructions

  • Combine all the ingredients (except for the olive oil) in a small bowl with a whisk.
  • Slowly pour in the olive oil and continuously whisk it in to emulsify.
  • Using an immersion or hand blender, blend the dressing for about 2-3 minutes until it thickens. The color will become a lighter brown and the consistency will be thicker (refer to photo in post).
    If you do not have a hand blender, pour the dressing into a standard blender and blend until it thickens.
  • Enjoy on salads, sandwiches, or as a dip.
