Combine all the ingredients (except for the olive oil) in a small bowl with a whisk.
Slowly pour in the olive oil and continuously whisk it in to emulsify.
Using an immersion or hand blender, blend the dressing for about 2-3 minutes until it thickens. The color will become a lighter brown and the consistency will be thicker (refer to photo in post).If you do not have a hand blender, pour the dressing into a standard blender and blend until it thickens.
Enjoy on salads, sandwiches, or as a dip.
Notes
How do I store this dressing?Put the dressing in an airtight jar and store it in the refrigerator. It will be good for up to 3 weeks. Be sure to stir it before using. If the dressing sets in the refrigerator, let it thaw out on the counter for a few minutes before using. If you can't wait, zap it in the microwave for just 5 seconds, stir, then serve!
