Ingredients
Shrimp Tacos
1poundlarge shrimppeeled and deveined
Cajun seasoning
2teaspoonsolive oil
6smalltortillascorn or flour
1avocado, in slicesoptional
Pineapple Salsa
3cupspineapplediced
½cupred oniondiced
¾cupred bell pepperdiced
⅓cupcilantrofinely chopped
¼cupjalapenofinely diced
2tablespoonsfresh lime juice
pinch of salt
Instructions
Make the pineapple salsa by tossing all of the pineapple salsa ingredients together. Set aside.
Rinse, drain, and dry the shrimp with a paper towel. Season the shrimp generously with cajun seasoning.
Set a flat-bottom pan on medium-high heat and add the oil. Once the pan is hot, add the shrimp.
Saute one side of the shrimp for about 2 minutes. Flip them over and season the other side and cook for 1-2 more minutes. The shrimp will turn pink once it is cooked.
Assemble the Taco
Warm up the tortillas in a hot pan, with or without a little oil.Line up the shrimp on a tortilla.Add a generous scoop of pineapple salsa on top. Add a couple avocado slices if you'd like. Enjoy!
