1sheetpuff pastry doughcut into 4 squares
3mediumapples (your choice)I use green apples
⅓cupbrown sugar
1tablespoonall-purpose flour
1teaspoonvanilla
1teaspooncinnamon
1pinchsalt
1egg yolkfor egg wash
1teaspoonwaterfor egg wash
¼cupcaramelstore-bought or homemade
Instructions
Firstly, thaw out the puff pastry (you will only need one sheet to make 4 turnovers). This can be done overnight in the refrigerator or it can be left on the counter a few hours before you are ready to use it.Note: Puff pastry dough is easiest to use when it is still somewhat cold. It is harder to handle if it gets too warm.
Preheat the oven to 400°F.Wash, peel and chop the apples in pieces that are about half an inch wide.
In a medium-sized saucepan on medium heat, add the chopped apples, flour, vanilla, cinnamon and brown sugar.Stir frequently for 5 minutes.Then, reduce the heat to low and let it simmer for 5-8 minutes to soften the apples.Remove from heat and cool for 20 minutes.
Unroll the pastry dough and use one sheet. Cut it into four equal squares.Add equal parts of the apple filling to the center of the pastry dough.Fold the pastry dough over into a triangle shape.Seal the edges by pressing the edges down with a fork.Line a baking pan with parchment paper or nonstick cooking spray and transfer the turnovers onto the prepared baking pan.[See instructions in the post for guidance!]
Make an egg wash by mixing an egg yolk and 1 teaspoon of water. Brush it on top of each turnover. This will give it its golden color.
Bake the turnovers on the middle rack at 400°F for 20 minutes or until the turnovers puff up and turn golden brown.Let the turnovers cool for 5 minutes before drizzling caramel on them.
Eat them warm on their own or with a side of vanilla ice cream.
