2-3handfulschopped romaine lettuce
2Mediterranean cucumberssliced
2tomatoessliced lengthwise
¼cupred onionsliced
⅓cupkalamata olives
½cupfeta cheesecrumbled
dried oregano
black pepper
Greek Vinaigrette
¼cupextra virgin olive oil
¼cupred wine vinegar
¼teaspoonblack pepper
½teaspoonsalt
½teaspoondried oregano
Instructions
Add the lettuce to a salad bowl.Top with the cucumbers, tomatoes, onion, feta cheese, and kalamata olives. Generously sprinkle with oregano and black pepper.
Make the vinaigrette by whisking all of the ingredients together except for the olive oil.Then, slowly add in the oil while whisking continuously to emulsify the vinaigrette.Alternatively, you can put all of the vinaigrette ingredients in a jar and shake vigorously until combined.
Pour the desired amount of dressing on the salad and enjoy immediately.
