Ingredients
Shrimp Tacos
1poundshrimppeeled and deveined
Cajun seasoning
2teaspoonsolive oil
6small tortillascorn or flour
2cupsgreen cabbageshredded
2tablespoonscotija cheeseoptional
1avocado in slicesoptional
Cilantro Lime Sauce
1 ½cupcilantrochopped
¾cupsour cream
1-2clovesgarlic
2tablespoonslime juice
¼cupolive oilor water
½teaspoonsalt
¼teaspoonblack pepper
½teaspoonground cuminoptional
Instructions
Make the cilantro-lime sauce by blending all of the sauce ingredients together in a food processor until smooth. Set aside.
Rinse, drain, and dry the shrimp with a paper towel. Season the shrimp generously with cajun seasoning.
Set a flat-bottom pan on medium-high heat and add the oil. Once the pan is hot, add the shrimp.
Saute one side of the shrimp for about 2 minutes. Flip them over and season the other side of the shrimp and cook for 1-2 more minutes. The shrimp will turn pink once it is cooked.
Assemble the Taco
Warm up the tortillas in a hot pan, with or without a little oil. Line up the shrimp in the tortilla. Add a generous dollop of the cilantro lime sauce. Top it off with shredded cabbage. You can add some cotija cheese and some avocado slices to the taco if you'd like. Enjoy!
