Glaze
1cupketchup
1 ½teaspoonsgarlic powder
1teaspoononion powder
3tablespoonsbrown sugar
2teaspoonswhite vinegar
Instructions
Preheat the oven to 375°F.
In a large bowl, add the ground beef. Then add the grated onion, minced garlic, and breadcrumbs. Gently combine the onion, garlic, and breadcrumbs, without mixing it into the meat just yet.
In a small bowl, stir together the rest of the meatloaf ingredients including the eggs, ketchup, parsley, milk, salt, pepper, and oregano.Add the mixture to the meat and mix it all together with your hands until it's incorporated. Note: Do not overwork the meat - just mix until it's all combined.
Spray a low rimmed baking pan with nonstick cooking spray.Form a log shape with the meat mixture and set it on the baking pan. Bake for 40 minutes.
As the meatloaf is cooking, make the glaze. In a small bowl, mix all of the glaze ingredients together. Take out the meatloaf after 40 minutes and gently slather on the glaze.Return the meatloaf to the oven and bake for an additional 15-20 minutes. This gives the glaze enough time to get nice and sticky.
The meatloaf is done when it reaches an internal temperature of 160°F. Take it out of the oven and let it rest for 10 minutes before transferring it to a serving platter. Enjoy!

You can store meatloaf in an airtight container in the refrigerator for 3-4 days. If you would like to freeze it, cut the meatloaf into slices and separate or wrap each slice with wax paper for easy reheating in the microwave. Or, wrap each slice with aluminum foil for easy reheating in the oven at 200°F for 15-25 minutes or until warmed through.
