Ingredients
2poundsground beef80/20
1smallonion, gratedabout ¾ cup
4clovesgarlicminced
½cupfresh parsleyfinely chopped
½cupbreadcrumbs
¼cupmilk
2largeeggslightly beaten
1 ½teaspoonsalt
½teaspoonblack pepper
½cupgrated parmesan cheese
Instructions
Preheat the oven to 400°F.Line a large baking pan with parchment paper, aluminum foil and/or cooking spray. Set aside.
Grate the onion, mince the garlic, and finely chop the parsley.
In a large bowl, mix all of the ingredients together, except for the ground beef.
Then, add the ground beef to the mixture and combine well (with your hands).
Use an ice cream scooper or spoon to portion the meatballs. Use your hands to form them into round 1-inch meatballs and place them on the prepared baking pan.*Depending on the size of meatball you make, this recipe will make 25-35 meatballs.
Bake for 25-35 minutes until nicely browned and the internal temperature reaches 165°F.
Serve on their own, with pasta or in a sandwich.Enjoy!
Notes
These meatballs freeze well. If you have any leftover meatballs, let them cool then put them in a ziplock or silicone bag and freeze. Keep frozen for up to 3 months.
